Strawberry Shortcake Cheesecake
Bottom Crust:
- 22 Golden Oreos Crushed
- 5 tbsp buttter, melted
Filling:
- 4-8oz packages cream cheese (room temperature)
- 1 2/3 cups sugar
- 1/4 cup corn starch
- 1 tbsp vanilla extract
- 2 eggs
- 3/4 cup heavy whipping cream
- 1 jar of smuckers strawberry ice cream topping
Topping:
- 12 Golden Oreos curshed & divided into 2 bowls
- 1 1/2 tsp softened butter (room temperature)
- 3 tbsp of strawberry jello powder
Instructions:
- Preheat oven to 350 degrees
- Line Cheesecake pan on outside with foil to seal
- Grease inside of pan generously
For the crust:
- Crush 22 oreos then add melted butter and press into pan
For the filling:
- In a large mixing bowl add the cream cheese, corn starch, sugar, vanilla and eggs. Blend until creamy and smooth.
- Add heavy cream to mixture and blend well.
- Spoon 1/2 of the cream cheese filling on top of the crust.
- Drop spoonful's of the strawberry topping on top of the 1st layer of filling only using 1/2 of the jar.
- Drag a butter knife through the mixture marbleizing.
- Pour remaining cheesecake filling into pan and drop the remaining strawberry topping by spoonful's.
- Repeat marbleizing.
- Bake 1 hour in a water bath until there is a slight jiggle.
Crumb topping:
- In a small bowl or food processor crush break Oreo's into large crumbs.
- Add the softened butter and mix gently with fork to make pea sized pieces stick together. Scoop out 2 tbsp into a separate bowl and set aside.
- Pour the 3 tbsp of strawberry Jell-O powder over the remaining crumbs and continue pinching pieces together with butter (add more butter if needed).
- Add crumbs to top of cheesecake.
